Pour son âge – 28 ans –, Alexandre Gauthier a un long périple professionnel derrière lui. Sa formation au sein de grandes maisons lui a valu une reconnaissance rapide : tous les guides le décrivent comme l’une des valeurs émergentes de France. Il n’est cependant pas aventureux d’avancer que le meilleur est à venir, car Alexandre est un coureur de fond capable de marquer un rythme progressif dans la conquête des hautes sphères. Tranquille et ambitieux, il sait parfaitement que pour bien grandir, il faut mûrir en gardant les pieds sur terre.

A sauce with quite a bit of character, very Italian, from the south, rustic and primary. The up to 14 ingredients are mashed into a dense paste: Mediterranean bluefin tuna (19.16%), wild fennel (9.58%), extra virgin olive oil, sun-dried cherry tomatoes, red pepper, Sicilian capers, chili pepper cream, garlic, basil, parsley, mint, oregano, black pepper and salt. With so many elements that are so well balanced, it is difficult to pinpoint flavors—the fish is noticeable, as is the mild heat of the spices; the fragrances of the herbs, giving it complexity and freshness; and the unctuousness of the oil. Among its many applications, it can be diluted in hot water to make a good sauce for all types of pasta.

The symbol of the highest quality quince in the world. It combines the greatest artisanal tradition with two ruling concepts in modern gastronomy: naturalness and lightness. In other words, this is an industrially produced homemade product that has greatly increased in fruit content (61%) and diminished in sugar (39%). The result is that the quince is chewy with a transparent, immaculate, pure flavor in which the fruit and acidity are perfectly compensated by sweetness. With a meaty texture, combining the slight harshness of the quince seed with the slight juiciness of the syrup. Caramelized orange in tone. Made with fresh fruit year-round, mainly from Spain and from Chile and Argentina in winter. Packaged in blocks of 8.2 and 2.9kg, sold when cut, as well as in terrines of 250 and 400g.

The caviar of this salmonid is semi-canned and prepared from fresh rainbow trout roe, lightly cured in brine. This company sells 20,000 kilos per year, and up to 600 tons of trout meat.

Vibrant salmon in color, the roe are very separate from each other. Impressive texture—if they are held on the tip of one’s tongue and pressed against the roof of the mouth, they explode as if they were balloons, producing a very pleasurable sensation. At the same time, they radiate with marine and saline substance, the former being clearly dominant. And they are subtly acidic. Very refined and expressive at the same time.

If we had to find a point of reference for its flavor, we could observe taste similarities (though not in texture, since we are dealing with a cream) with pistachio nougat. It tastes purely of this nut and retains its vibrant green color. Mixed with sugar, it forms a lovely paste that can be spread by adding a little water for using it in lighter form for cooking.

Among its uses, to enhance many desserts, from ice cream to various fruit soups.

Organic extra virgin olive oil inspired by the Pierangeline family (Gambero Rosso), made from Moraiolo, Leccino and Frantoio varieties. It expresses refinement and fruitiness, within a clear Tuscan character. Fresh, bold aromas of olives, herbs, vegetables and dried fruit; very evolutional and complex. It enters the palate delicately, subsequently becoming rich, with very light bitterness and tempered spiciness that intensifies in the aftertaste.

Limited production, sold in large part in the restaurant for 20% less than retail.

Between their two brands, Valmiel and Dehesa del Roblegal, the Gusano brothers produce about 15,000 kilos annually, 4,500 of which are rosemary honey.

Toasted cream in color. Creamy, granular, dense texture. Characterized by its extreme delicacy, immense floral flavor and well-executed harmony. At the start it is very subtle, but it gains intensity to take hold of the palate and last a long time, leaving a honeyed but not at all cloying sensation. They have improved markedly since appearing on the market. These peppers are not presented whole and in their raw shape, but rather in large pieces; the integrity of the Cristal variety is practically impossible to maintain because they are so delicate and break so much when pealed artisanally by hand. It goes without saying that their texture is fragile because of their thinness; as their flavor is fine, subtle…extremely refined and without equal among Spanish red peppers. Their extreme sweetness stands out, contrasted with barely perceptible sour and bitter notes that give them complexity; and their mellowness clearly predominates. Exquisiteness impregnated with nature and rusticity, revealing the roasting aromas which give them nobility. Vibrant red in color, showing ripeness and shining with exceptional black speckles. Virtually seedless and meticulously cleaned.

The production of this celebrated variety of peppers is anecdotal—one could say that it is practically extinct from commercialization. Grown in Quel.

Un grand merci à Jean-François Piège (Les Ambassadeurs) de nous avoir fait découvrir ce merveilleux restaurant, inauguré en 2005 sous la houlette d’Alexandre Bourdas, un cuisinier qui, avant de se mettre à son compte, fut chef de cuisine de Michel Bras au Japon – ce qui en dit long. Première caractéristique : son obsession pour les matières premières, toujours éminentes. Ensuite, sa formation technique, extrêmement poussée, reflétée au gré d’exécutions irréprochables du début à la fin du repas, sans la moindre erreur de parcours. Les cuissons méritent toutes la grande distinction.
