Cibèle is an association of 25 farmers cultivating 390 ha. of green lentils of Berry, protected under the quality-label Label Rouge. They are, simply, a cut above the rest…

Cooking the lentils on medium-high heat, they result homogeneous in quality, perfectly maintaining their flavorful and textural identity, as if it were al dente rice prepared without the characteristics of the stock. They have a smooth, consistent texture, very even throughout, maintaining their shape without breaking. There are no remnants of the skin, in flavor or texture, nor is there any pastiness noticeable. They communicate an exquisite flavor, succulent inside, expressing the idiosyncrasy of the legume, and a clean mineral aspect with minimal astringency.

The Castillo de Canena Family Reserves have two appellations, Picual and Arbequina, depending on the olive variety used to produce the oil. From the first, they produce about 20,000 half-liter bottles per run, depending on the harvest, and 35,000 from the second. They are numbered in both cases—a selection of the best olives brought into the mill.

Fruity, elegant and balanced, with the typical, albeit wisely subtle, characteristics of Picual. Bitterness and spice are transformed into pluses, into complementary rather than detrimental qualities. They provide complexity and accentuate the uniqueness of a modern oil that blends lush vegetal aromas and presents a clean, vibrant palate bursting with olive juice.

This famous foie gras and other duck and goose product company offers this legendary regional recipe as a pre-prepared dish. Based on traditional parameters, and if we took into account the limitations inherent in preparing canned fish, it would deserve an outstanding rating.

This is an updated, noble dish. The lamprey fully retains its fat, gelatinousness and juiciness, with a full, authentic, wild flavor. The sauce embodies technique and refinement. Dense and light at the same time, with a homogenous texture befitting a stew; the wine and vegetables are noticeable on the palate in perfect sapid equilibrium, intermingled with the fish; refined in its classicism. And it offers a third lure: a wonderful side of tender leeks that melt like butter in your mouth.

Light yellow, moldy, wavy and pleated rind. Its ivory interior, depending on its age and temperature, goes from tender and unctuous to completely fluid, as if it were a dense, creamy soup. Natural, pure cow’s milk flavor, very concentrated and strong, always balanced with very nuanced acidity and bitterness; qualities that give it complexity, as well as a forest flavor. Its aroma is penetrating and persistent, with woody notes that enrich its eminently lactic character. It must be noted that it ages in the cheese factory for 21 days on red fir slats.

This cheese, made exclusively from raw cow’s milk between August 15 and March 15, is sold from September 10 to May 10. Part of the AOC Mont d’Or or Vacherin du Haut-Doubs appellation, which comprises 11 cheese makers for a production of 3,800 tons.

Sanfilippo salt-cured anchovies are unbelievably good; and they have the advantage of being available in small 380g cans in addition to large ones of multiple kilos, making them ideal for the home. Each one holds eight beautiful pieces, carefully caught in the Cantabrian Sea.

They shine with a gorgeous, very even salmon-brown color, and they are quite smooth. On the palate, they stand out for their intense, wild flavor in which the anchovy and salt achieve a magical equilibrium.

The cardboard box around the can has instructions for their preparation. Extremely limited production.

A very dignified dessert for eating at home, for the quality of the selected ingredients; and an original one, for the mixture that makes it stand out; and though classical, it has the mark of haute cuisine. It consists of a dried fig stuffed with a toasted almond, in a sauce made with tangerine juice, cocoa and sugar; this gives it obvious complexity, with bitter, acidic and sweet notes. The sweetness clearly predominates but is far from being excessive. The juicy texture of the fruit soaked in the syrup makes it easy sink your teeth into.

It is a good idea to put the jar in the oven at 70ºC for 10 minutes and serve it hot.

A prestigious winery, maker of one of the finest Chianti Classicos—Castello di Ama—and at the same time the producer of a very small and select quantity of extra virgin olive oil, pressed from a coupage of the varieties grown on its land: Correggiolo, Moraiolo, Leccino and Frantoio; from which the yield is about one liter of oil for every six kilograms of olives.

They have set a goal of producing an elegant and harmonious oil, and they have succeeded with flying colors. In aroma as much as in flavor, it is embracing, thanks as much to its delicacy as its qualities. Among these are extraordinarily fruity aromas, with fresh olive fragrances and vegetable notes. The anchovies in virgin olive oil prepared by José María Zorrilla have won deserved fame among those from the Cantabrian Sea. They satisfy all of the requirements of prestige and excellence to the letter: beautiful, quality specimens caught in the north of Spain, immediately and painstakingly hand-treated, cured for six years and, of course, with limited production.

Salmon-brown in tone, uniform and devoid of dark stains along the dorsal spine. Silver specks are noticeable on the skin side, signifying handling with a cloth. Meticulously de-boned. Rich, with a meaty texture. Clean, deep flavor, well balanced between the fish and the salt—though salty, they appear perfectly married to the extra virgin olive oil, which makes them unctuous.

They are always superior to those sold in larger packages, because the fish are larger.
