We discovered this mozzarella in La Tradizione (+39 081028437), a store located in Vico Equense, on the Sorrentine peninsula, which offers the best delicacies of the Campania region: cheeses, cured meats, pastas, etc. The owner is Salvatore De Gennare, celebrated cheese expert who has this mozzarella brought to town every day for optimum freshness (a key factor for this cheese since even after three days from its production the quality is significantly altered). In truth, the finest mozzarella can only truly be eaten in southern Italy due to this element.
It is made from amazingly fresh buffalo milk, substantial, concentrated, dense, full of personality… mozzarella produced at a small family dairy farm situated in the mountains a few kilometers outside of Caserta. It has a delicate, balanced taste, pure, lactic and creamy, with floral and herbal sensations and a very subtle and enriching acidity as well as perfect seasoning. As one bites down, the mozzarella bursts in the mouth, demonstrating its juiciness, the fresh milk gushing forth, slightly grainy, a little fibrous and, at the same time, evanescent and tender. Porcelain white in color. Hand made.

The queijadas de Sintra are hugely famous in Portugal, with just a handful of artisans producing and marketing them in this adorable, historic little town included on the UNESCO World Heritage list. The most long-running brand going back centuries and boasting a remarkable, well-deserved reputation is Sapa – an artisanal house that churns out a limited production of these truly exceptional delights. They are only sold from their office on the way up to the old town of Sintra.
The exquisite taste and balance stand out within the subtle complexity of flavor and texture. There are three distinct consistencies: light caramelization of the upper part, a juicy, spongy texture in the filling and a crispy fragility to the thin exterior that holds it together. The flavor is simply that of the ingredients used: curd, flour, egg yolks, sugar syrup and cinnamon… aromatic sensations that confront the palate with supreme delicacy.
They are sold in small pieces (amounting to about two bites each) or the larger versions of 12 servings each which for some reason seemed to be better. It is crucial to eat them freshly made or at the very latest the following day. After two days, though still good, they begin to lose their charming qualities.

This is Conceicão Marques’ version of a common cheese made on both sides of the ancient border between Spain and Portugal: Torta del Casar, Torta de la Serena, Torta da Serra are a few of the names given to this variety of cheese. All of them are characterized by their incredible creaminess and substantial flavor, made with ewe’s milk and curdled with cardoon flowers. The type in question here is offered in small quantities that facilitate consumption without affecting the characteristics or quality, though the 250 gram piece is preferable.
Intense flavor of ewe milk, very concentrated, fatty, filling the palate with nobility and natural purity, with a light acidity and a minimum amount of bitterness that gives it character. Substantial but very balanced. When fully ripened the consistency is fluid – liquid delicacy hidden within its distinguished density.
This is an extremely limited product of exceptional quality that is sold only in the Setúbal market on Wednesdays and directly to a handful of select restaurants.

The beans are characterized by their distinct shape and color: round, ovoid, with a white marble-like, lustrous tone. The first virtue of these beans is the texture, it is almost as if it was lacking the skin altogether. Its second quality is consistency: smooth and creamy. And the final winning characteristic is the flavor: delicate, full-flavored and buttery. What’s more, they don’t require long to cook.
They are sold in different sized packages: 250 g, 500 g, 1 kg and 5 kg.

The Armuña area outside Salamanca is the only place in Spain that carries a “Denominación Especifica” (Special Appellation) for its lentils, signaling a distinction in quality and peculiarity. Among the companies here, Montes (number one in legume quality for the Castille region and probably the entirety of Spain) produces around 80,000 kilos of lentils yearly. The quality they express is undeniably select.
Raw, they demonstrate a slightly toasted green color–beautiful. After cooking, they take on a darker, more brownish green tone. Among their qualities it should be noted that their skins do not fall apart or come undone, even if they are slightly overcooked. They make for a fine broth, clear, thick and full of flavor. They are refined in the mouth and the texture is uniform and meaty, with an imperceptible skin. Another curious point: one kilo of raw lentils will produce between 2.6 and 2.7 kilos of their cooked counterparts, a difference of almost 350 grams over other lentils.

This, the highest quality legume company in Castilla-Leon, sells stellar products grown in various parts of the region like these chickpeas, of which there are three varieties: Pedrosillano, Lechoso and Fuentesaúco.
The latter, grown on a 9 ha. parcel in the region with the organic seal of approval from Manuel Tola, truly stand out. They differ from the Pedrosillano by their beauty, with a lighter tonality, more white, and by their creamy texture, dissolving in the mouth like butter. They have an incredible flavor that builds on the palate. What’s more, the skin is almost imperceptible, preserving the bean intact as long as they are not overcooked.

Eusebio Montes has created one of the most charismatic legume companies in Spain thanks to his Armuña lentils, his chickpeas (Fuentesaúco, Pedrosillano and Lechoso) and his white beans, both the cannellini and grilled variety. It is important to note that he uses two names in his business, his surname, Montes, for the lentils and ‘La Buena Olla’ for the chickpeas and beans.
The grilled white beans are primarily produced at Ribera del Tormes, more precisely in Francos, a small town 10 km outside Salamanca where they harvest around 40,000 kilos per year of an unprecedented quality for this variety thanks to the local soil. Legumbres Montes sold 14,000 kilos in 2001. With an ivory white tone when raw, they take on a beige, light brown color after cooking. They are fairly small, but ideal for those who love the texture of these beans without the skins, here almost imperceptible. They have a remarkably creamy texture, melting like butter in the mouth. The flavor combines delicacy with substance, possessing a singular flavor that is very balanced. In short, some of the finest beans in Spain.

This is a truly creative vinaigrette that brings a great amount of flavor to the ingredients whose nature it is to accentuate. If singularity is a virtue, nobility is even more important. Basically made with extra virgin olive oil (43%) and balsamic vinegar of Módena (31%), both from fine brands, to which is then added mustard, pine nuts and herbs, among other elements, making it very aromatic. Aside from the exquisite character and complexity, the first thing to be noticed in the mouth is its sweet and sour sensation impregnated with quality, insinuating a spice that never manages to come out. Because of its intensity, use sparingly.
