One’s attention is forcefully called to the delicate shape, made to look like a beautiful yellow wheat head (a color derived from the presence of egg, making up 25% of the pasta).
This is handmade, fresh pasta filled with a four-cheese cream (ricotta, edamer, grana padano and fontal) that is extraordinarily creamy, both the main ingredient and its filling. The pasta preserves its sapid identity well, while the presence of the cheeses in the dense cream brings a great deal of succulence.
In short, a beautifully prepared dish, artisan and very polished, which can also be prepared quickly: boil for two minutes in water with an abundance of salt and dress to taste.

A full-bodied olive oil of the picual variety from Jaén with an intensity that is in symbiosis with kinder expressions. The bouquet demonstrates patently smooth, clean and especially fruity aromas alongside the presence of other sensations: ripe olive, arugula and almond… an exuberance of nuances meriting praise. On the palate its magnanimous delicacy stands out, after which appears the bitterness, a bitterness that is converted into a relevant and permanent valor–noble–to finish with a slight spice that manages to not eclipse the bitterness, a characteristic that marks, even distinguishes its identity. The color is a golden green hue, clean and brilliant.

An enormously unique oil of the royal variety grown in Sierra de Cazorla – very limited production. Its idiosyncrasy makes it extremely appealing. Delicacy, refinement and subtlety are present both in the nose and on the palate, not at all exempt of nuances. Aromas of olives, olive leaf, apple and arugula. It is fruity, smooth and balanced in the mouth with a touch of sweetness, a light bitter characteristic and almost no bite. The olives pressed right off the branch give a cloudy, golden, green tonality to this oil.

Martín Berasategui, the most famous of Spanish pastry chefs, has said it himself: “It is impossible to make a better turrón.” The artisan in question here is Alfredo Mira who has scrupulously continued his family tradition, preparing this most excellent of products two times a year which is sold exclusively through their stores in Santander.
Made with almond, honey, sugar and egg whites, all of which are meticulously selected beforehand. Its presence is magnificent, expressing a tonality between a honey and a toasted color. Impeccably molded, with a compact, cream-dough mixture and no impurities – a wonderful texture and an optimum amount of fat. It expresses a very strong aroma of toasted almonds, is sublimely delicate in the mouth, clean in its almond flavor with light nuances of honey and a minimum sweetness that doesn’t overwhelm the palate at all, with noble harmony. In a word – majesti.

This company, famous in Huelva for selling the finest prawns and Norway lobsters from the area, offers a series of pre-prepared dishes, starting with these impeccable crustaceans. Here they offer a genuine, traditional shellfish cream flavor, made with 34% prawns, with a clean, straightforward taste of the prawn meat and a fumet made with the shells. It has the shape of a modern pudding, with neither cream nor egg, impeccably thickened, gelatinized, with a delicious, buttery texture (no butter used, however). It is presented molded into rectangular pieces with a traditional white prawn color and a lustrous surface.

This salt is better than Maldon, and dangerously close to grey Guérande. It is extraordinarily natural and artisanal. What we like most are the flakes, voluminous (they crumble down to smaller sizes if you prefer), irregular, fragile and “inconsistent”. They break apart in the mouth and satiate the palate with marine salinity and oceanic flavor, demonstrating unmistakable nobility. They illustrate without overwhelming. They enrich.

There are two versions: natural and smoked with Welsh oak shavings. The latter is utterly unique. The wood fragrances in no way prevail on the palate, but produce rather a charming rustic, authentic character. The tonality comes from the smoking derivatives.

A third version is impregnated with spices.

Excellent dried tomatoes that largely preserve their natural characteristics – not overly dried – offering a fresher flavor and a character that is essentially tomato. The elements of sweetness and acidity are blended in perfect harmony. Consequentially, there is more meaty skin than usually found with this type of product. Packaged in olive oil to preserve and strengthen the juiciness of the fruit.

They can be used with pasta, rice, salads, fish… an infinity of possibilities. For more refinement, the tomatoes can actually be peeled to serve only the pulp.
