A prestigious winery, maker of one of the finest Chianti Classicos—Castello di Ama—and at the same time the producer of a very small and select quantity of extra virgin olive oil, pressed from a coupage of the varieties grown on its land: Correggiolo, Moraiolo, Leccino and Frantoio; from which the yield is about one liter of oil for every six kilograms of olives.
They have set a goal of producing an elegant and harmonious oil, and they have succeeded with flying colors. In aroma as much as in flavor, it is embracing, thanks as much to its delicacy as its qualities. Among these are extraordinarily fruity aromas, with fresh olive fragrances and vegetable notes. On the palate it effectively combines basic, well-balanced flavors with very subtle sweet, bitter, and spicy notes.
