A very special salami, made from a noble and beautiful hog that gives it strong character. The presence of pig fat stands out significantly, ground in good quantity, certainly equaling the pork loin that completes it. This gives it great succulence, to which the seasoning also contributes—it is sharp, more in salt than pepper, which gives it a rousing aroma, and it is well portioned. Flavorful, very tasty, tender and buttery, though the exterior section, the edge, is a bit more compact. Each salami is cured for a minimum of 4 months.

This mustard is a gift from Jacques Decoret, as if he were to say to us: “it’s my favorite”. With this sort of presentation we give it all the attention it deserves. It is not without reason that it is the most famous in France, if we are speaking strictly of gastronomic craftsmanship. It was created in 1989 by Claude Maenner, who was inspired by old documentation of the region about the product in question. It is made with the brassica nigra (black mustard) and brassica juncea (brown mustard) varieties, brought over from Canada, which are then mixed with vinegar, St. Pourçain wine, water and salt.

The seeds explode in the mouth, like caviar eggs, filling it with a mustard aroma. Resulting in an ardent sensation, spreading in the mouth like a tasty fire that moves to the nose where it positions itself, saturating it with its fragrant characteristics. It is an aliment unto itself that needs no justification in order to enjoy it.

For a babà—an individual mushroom-shaped dessert with leavened dough—to retain its quality in a can is no small feat. Being soaked in a rum syrup (water, alcohol, sugar, etc.) gives it a certain degree of sponginess and a lot of flavor; the very balanced aromatization of the liquid, probably with vanilla, also adds to it. The cake is just slightly too floury, though the flavor and texture are corrected by the syrup. In short, a true drunken sponge cake for the drunk.

The exultantly green tone immediately catches your eye both for its intensity as well as its lively appearance, with an impressive glow due to the fact that they collect the olives after November 5th and then press them immediately. Exuberant aromatic and sapid qualities, strong vegetal and fruity notes, with a smooth start that seems to grow almost infinitely in depth until finally settling into two of the picual’s characteristics, bitterness and spice, with the former being more moderate than the latter. The Salcedo family, owner of the legendary restaurant Juanito, in Baeza (Jaén), has made a transcendental leap in the world of olive oil, substantially changing the development of the brand as well as the final product. The oil is now obtained from trees planted on terraces that have at least 4 meters separating each in height, situated in the Fuente del Robledillo, Los Villares. The hilly terrain and the characteristics of the soil impart a special personality to the product, along with the rigorous selection of the olives themselves, producing only 7,500 of the 500 ml bottles per harvest.

Roberto Vezzoso is an example worthy of imitation. On his 25 ha. estate, he cultivates fruits and vegetables that, after collection, are elaborated as hand-canned preserves. In this case there are only 40,000 kilos of this curious variety of pear. They come unpeeled with the core removed, in whole and halved pieces. Its consistent, granulated texture stands out: meaty, crisp, and clean. An extremely pleasant sweetness manifests on the palate, without excess, perfumed by the well-resolved Muscat syrup that enhances its qualities without affecting the natural flavor.

Comté is raw milk pressed cheese that is presented in round slabs of 63 centimeters in diameter and that weigh 42 kilos. It is produced in the Massif de Jura, a semi-mountainous region situated in France-Comté. It comes from Montbéliarde cows, each of which receive at least one hectare of pasture in accordance to regulations of the Appellation d’Origine Contrôlée, the first cheese to have this title in France. About 190 small dairies are in production.

Badoz is a legendary name in the region and in the product. It is offered in various cured stages: the normal from 4 to 6 months, Extra Sélection from 6 to 10, Grand Saveur from 9 to 13 months, and Extra Sélection Prestige from 12 to 18. Independent of these, of the season, etc., its extraordinary quality always prevails, guaranteed. It tastes of exceptional milk, dense, concentrated, “condensed”, and immensely rich. Other characteristics: it possesses a strong aromatic power, resulting very fruity with memories of meadows and herbs. It is easy on the palate and urges you to keep eating more.
