Fruity, seductive aromas in which notes of redcurrant and prunes appear and disappear, along with spices like cinnamon and vanilla as well as iodine and minerals. Prix à la carte: 35 €

This wine is the fruit of a union of two vineyards in Brunate—80%—and Le Coste—20%—that comprise an extension of 1.7ha, planted with 100% Nebbiolo grapes. The 2000 harvest yielded only 10,500 bottles and 400 magnums. Traditional vinification in wood casks for 25 days, followed by aging in large oak barrels for three years and six months of bottle-aging.

Notable among its characteristics is its vibrant garnet color, accented due to the aging process with typical orange highlights. Its nose has notes of raspberry, redcurrant and cherry preserves. Austere, severe, elegant in flavor, full-bodied and rich in layers and tannins. Long. With aging it becomes more ethereal and spiced, with characteristic aromas of cocoa, licorice, loam, leather and Tuscan tobacco leaves.

It has more strength than depth, a characteristic of almost all Toro wines, rustic by nature. Nevertheless, Juan Ignacio Velasco has attained a milestone as far as refinement is concerned in the region—he has tempered the expressions and the attitude of this bold red.

Immensely fruity, a quality that dominates with notes of black currant and fruit skins. In addition to a select grape (it is produced with Tinta de Toro), notes from aging are noticeable (it was aged for 16 months in Allier French oak barrels); toast, present with precision as well as spices, vanilla and cinnamon. Structured, full bodied, tannic and warm.

Conceptually well defined and unmistakable, and it shows: elegance and harmony are fundamental in a wine and in gastronomy. On the palate it is fittingly velvety, rounded and substantive at the same time—aimed at the connoisseur. A Bordeaux that offers clean, pure and simultaneously charismatic aromas and flavors: fruit, perhaps cherries; herbs, with anise notes; spices, difficult to pinpoint; wood, lightly smoked; and above all, a noble bitterness reminiscent of almonds. Measured nuances, perhaps even inspired by fantasy; they emerge together, combined to form a compact body that accentuates the whole. Balanced and with the character required by greatness, properly expressed without excess.

62% Cabernet Sauvignon, 27% Merlot and 11% Petit Verdot. Aged in 60% new barrels for 16-20 months.

Année de création: 1992
Production (bouteilles): 60.000
Surface de vignoble (Ha): 24
Marques: Chianti Classico, Giorgio Primo, Sangiovese Merlot
Prix à la carte: 43 €

The Giorgio Primo Chianti Classico is the result of a painstaking manual selection of the best Sangiovese (85%) and Merlot (15%) grapes. The winery holds 27 hectares of vineyards, oriented to the south in the “Conco d’Oro” of Panzano at an average altitude of 360 meters above sea level. The terrain is composed mainly of splintered white clay, and the cultivation method is the spur, with an approximate yield of 1 kilo of grapes per vine. The density is of 3,000 vines/hectare in the old facilities and 6,250 vines/hectare in the new ones.
Vinification took 15-20 days and the subsequent “sangrado” was done in 225 liter new French oak barrels. Aging is characterized by a first 8-month long period during which the wine is made in contact with fine sediment, whose activity is maintained with frequent bâtonnages and micro-oxygenation. Intense and bright ruby-red in color; aromas are sharp, precise and defined. Its fruitiness is perfectly integrated with aromas from the oak, with delicious balsamic notes. On the palate it starts fresh, continues harmoniously and has a finish that suggests extremely delicate tannins.

An immensely fruity wine that has greatly improved in elegance and harmony, converting freshness and rusticity into laudable values and exhibiting a great finish. The potency of the Shiraz is evident in the nose as much as to the palate, making it fully varietal with aromas of grape skin, wild berries and herbs, all stimulating the olfactory. These sensations are supported with elegance on the palate: fruitiness, freshness, liveliness, substance, a touch of rusticity and an exuberant complexity—all very tempting.

Aged in wood for 13 months. Bottled in November 2003. Only 5,960 bottles.

Nebbiolo 100%. Alcohol: 14.5%. Production: 5000 bottles.
Deep red color. A wide-ranging nose, suggestive and deep, with ethereal sensations at first, later becoming spiced and fruity, dense and pulpy. With notes of licorice, milk chocolate and cherry preserves followed by tobacco and violet, blackberry and rhubarb. On the palate it has a powerful impact, evidence of structure and great body, well defined and enveloping, with soft, precise tannins and a very long finish.
During the first year, the vinification of the grapes, from the Rocche dell’Annunziata and Torriglione vineyards in the municipality of La Morra, is done without the addition of selected yeasts or sulfurous anhydride; aging is done in Allier oak barrels, a quarter new, over 24 months.

A Cabernet Sauvignon from a lineage and winery that year after year is among the elite of Spanish wines. In this millennium wine, what stands out powerfully is its strong floral identification. Above all in the nose, although these sensations do transfer to the palate, where fruitiness reigns—extraordinary, with notes of wild blackberries, countryside, as well as licorice and a hint of minerals. It quintessentially personifies the qualities that distinguish a great Cabernet Sauvignon. Elegant and harmonious, as well as substantive. With body, although within its immense identity it is not an especially expressive wine, stressing quality over quantity.

100% Cabernet Sauvignon. Aged for 18 months in new Trocais and Nevers oak barrels. Bottled in August 2006.

Its flawless finish makes an impact—and if, to this great merit, we add an unbeatable price/quality ratio, what more can we ask for? It is hearty and refined, with a remarkable elegance attesting to the noblest quality of Cabernet Sauvignon—68%—complemented by 30% Merlot and 2% Cabernet Franc. Expressive and subtle aromas evoking various sensations, among which are black berry compote, spices, menthol and preserves. The same notes are reproduced on the palate, with delicacy as the protagonist intermingled with its character, evolving smoothly while always exhibiting its perfect ensemble.

Aging in 35% new barrels for 18 months. The Domaine de Chevalier comprises only 4.5 hectares within the winery’s property, with an annual production of 18,000 bottles.
