Olive oil cocktail with cold tomato soup and pepper (2005)

With perseverance and dedication, Josep and Lluís Mª Feliu have managed to transform a café in the historic district of Girona into a successful restaurant where one can enjoy dishes that are less eccentric than they are balanced and exquisite. A truffled quail egg yolk is placed at the base of a glass then topped with the cold tomato soup and spicy pepper, followed by two more yolks. The ensemble is covered with warm oil, decorated with young garlic stalks and finished with a few flakes of smoked salt.
