This is one of the great Spanish Sauvignon Blancs, though it is made with 5% Parellada. It magically combines the virtues of a fresh wine and the very nuanced character of an aged one. Its peculiar production is decisive in this character: partial fermentation of 50% of the must in new American oak barrels and subsequent aging on its lees for six months, while the other half is made in stainless steel.
Purely varietal on the nose, with its mineral character dominant and very well combined with its exotic fruitiness, enveloped in freshness. The wood stands out and gives it subtlety. On the palate its minerals are reproduced—earth with sulfur, which leaves its indelible mark. From there on appear other vibrant notes: passion fruit, lime, grapefruit… with a very light oak base.
