Sicilian olive oil from a century-old company located in the famous denomination of Mont Iblei, made organically from moresca and tonda iblea varieties. The fruits are harvested green, at the end of October or beginning of November, then pressed for a minimum of 8-10 hours, allowing for the full expression of the olives’ natural characteristics, which is then improved upon using avant-garde techniques.
Delicate and fruity, bold and persistent, with clean aromas of the olive, herbs and diverse vegetables, conferring on it a delightful complexity. On the palate it makes a sweet, fruity first impression, with a temperate, virtuous bitterness. There is no acidity to speak of and the spice is nothing more than an insinuation. In short, an elegant, balanced, fruity oil that is moderate in its expression.
Only 7,000 to 8,000 bottles (500 and 750 ml) are produced each season.
