Jonni Boer "De Librije", winner of the III Alba Truffle award
The distinguished Dutch chef, Jonnie Boer, has received the award for Dish of the Year in the Tartufo Bianco d’Alba International Competition, Monday, November 7th, presenting a creation prepared with the most sublime of aromas. It took place at the grand Castillo de Grinzane Cavour, just at the end of a long, brilliant and copious meal that was comprised of the following menu: “We should never stop planting”, by Massimo Bottura (Osteria Francescana), in Modena; “The Lively Forest”, by Quique Dacosta (El Poblet), in Denia; “Snert with tartufo bianco d’Alba”, by Jonnie Boer (De Librije), in Zwolle; “Risotto mantecato al Castelmagno d’Alpeggio”, by Enrico Crippa (Piazza Duomo), in Alba; “Cherasco escargots with Jerusalem artichoke cream, chips from the same vegetable and toasted walnuts”, by Gian Piero Vivalda (Antica Corona Reale di Renzo), in Cervere; “Caquis soup with candied chestnuts and hot rum foam”, by Alessandro Boglione (Ristorante Al Castello), in Grinzane Cavour; and “Langhe hazelnut tart”, by the patisserie Canobbio, in Cortemilia. All the dishes were well irrigated by fine Barolos and Barbarescos.
In the first edition, the winner was “The Lively Forest”, by Quique Dacosta (El Poblet), and in the second, “New Borscht with white truffle”, by Anatoly Komm (Barbpbi).
