Martín Berasategui, the most famous of Spanish pastry chefs, has said it himself: “It is impossible to make a better turrón.” The artisan in question here is Alfredo Mira who has scrupulously continued his family tradition, preparing this most excellent of products two times a year which is sold exclusively through their stores in Santander.
Made with almond, honey, sugar and egg whites, all of which are meticulously selected beforehand. Its presence is magnificent, expressing a tonality between a honey and a toasted color. Impeccably molded, with a compact, cream-dough mixture and no impurities – a wonderful texture and an optimum amount of fat. It expresses a very strong aroma of toasted almonds, is sublimely delicate in the mouth, clean in its almond flavor with light nuances of honey and a minimum sweetness that doesn’t overwhelm the palate at all, with noble harmony. In a word – majesti.
