What distinguishes this cava from other Spanish labels is that it is closer to champagne, due to the characteristics of its noble varietals, Chardonnay and Pinot Noir. These give this first-growth wine its boldness and complexity, enhanced also by its brief aging in barrels.

Notable, fine and bold aromas of ripe fruit, raisins and sweet aromatic herbs. Also with buttery and toasty notes. On the palate as in the nose, it blends delicacy and flavor; the clean fruit dominates, giving it a sweet and acidic flavor, making it enjoyable and charismatic, and rounding out with a hint of bitterness. Its appearance also stands out, with a constant flow of small bubbles, forming beads and crowns: majestic.

The flagship of a company that personifies the history of cava. As such, it is the product with which this highly recognized producer shows just what it is capable of. A bubbly with immense personality, provided by the grape varieties and percentages at which they are blended—50% Chardonnay, 30% Macabeo and 20% Parellada—as well as the spirit with which it is conceived.

Aromatically explosive, with extraordinary potency and length as well as quality; fruitiness clearly predominates, with citrus notes and evidence of aging. On the palate, the grapes once again stand out with the character of the Chardonnay, making it very refreshing, somewhat acid and a touch bitter; subtly expressed flavors, matching the elegance and harmony that set them apart. A delicacy complemented by dazzling and somewhat full-bodied expressiveness.

Price: 61 €

A small, passionate and honest winemaker, Enzo Boglietti, capable of conveying a message with substance. We have here a superb wine with immense character and elegance, as well as the charm of singularity, made from Nebbiolo grown in a miniscule vineyard with a minimal yield from which only 3,200 bottles are produced. Noticeable (and how!) is the presence of very ripe fruit (blackberries, blackcurrant, plums in preserves) that contribute to two aspects, sweetness and quality; to which we should add floral notes, such as violets, coffee and an unmistakable minerality that evokes earth. It saturates the palate with a mysterious, intellectual and sybaritic complexity, with the added value of a subtle and dignified bitterness; and it is certainly not devoid of tannins.

Aged in barrels for 30 months.
