At the extreme south of the A.O.C., the Aube is, after the Marne, the second largest department in the Champagne region. Often underestimated, it possesses vineyards with a remarkable capacity for the development of Pinot Noir. Cédric Bouchard, a vintner who is as passionate as he is demanding, established in Celles-sur-Ource, confirms the potential of the zone with this champagne that has been relatively unknown up to this point, soaring to fame thanks to its excellent quality, a blanc de noirs produced from the red grapes of his extremely small vineyard of 0.905 hectares, dating to over thirty years, from which he manages to produce 3,600 bottles per harvest.
The key word here is delicacy. Delicate, elegant, refined yet at the same time winy, very refreshing and, through the subtle acidity and minerality, also dense and corpulent. The behavior of the bubble comes immediately to mind, expressing itself in the mouth with the same lively nature as in the glass, jumping–no, frolicking over the tongue. The champagne has a golden, grey tone.
