If Parés Baltà marked a milestone with their Cuvée de Carol, a barrel-fermented chardonnay, they are now broadening their range with this cava: produced along similar lines, the pinot noir shares the stage with the chardonnay and boasts a lighter barrel-fermentation, notable in the nose and on the palate.
Elegant and balanced, full-bodied, with a delightful balance between the fruit and ageing process, the former coming across more powerfully, and a complexity that is absolutely charming: aniseed herbs, bitter almond, subtle acidity, creaminess and bite. Only 5,330 bottles were produced. In short, its unique refinement, fruitiness, impact and nuances situate it at the summit of all cavas.
