"ZEITÚM": COOKING USING EXTRA VIRGIN OLIVE OIL FROM JAÉN
Anselmo Juárez and Santiago Hernández are the creators of this restaurant, located in Úbeda (Jaén), that has developed the cookery with extra virgin olive oil like nowhere else in Spain. This ingredient is indeed part of almost all the recipes. "Zeitúm" proposes a creative cuisine of clearly marked Andalusian influence that recreates the most traditional dishes.
